Taco Salad Bowls
If you love tacos but don’t want to feel weighed down after eating them, why not try taco salad bowls instead? All you need is your favorite lettuce (or romaine if you’re feeling fancy!), black beans, diced tomatoes and onions, corn, shredded cheese, crunchy tortilla strips (or chips), and your favorite protein. Top it off with a dollop of Greek yogurt mixed with salsa or hot sauce for a creamy kick. And just like that — dinner is served!
Veggie Frittata
Frittatas are an easy way to get your veggies in for breakfast or lunch. Start by preheating your oven to 350 degrees F and spraying your pan with cooking spray. Then sauté whatever vegetables you have on hand — mushrooms, spinach, peppers – throw it all in! Once they’ve cooked through add 8-10 beaten eggs (depending on the size of your pan) and sprinkle with salt and pepper. Bake until golden brown then top with fresh herbs or cheese if desired. Enjoy hot or cold - either way it's sure to be delicious!
Stuffed Sweet Potatoes
This one is great for dinner or meal prepping for later in the week. Pre
heat oven to 350 degrees F and wash sweet potatoes before baking them directly on the oven rack for 45 minutes - 1 hour until tender. While those bake away prepare any filling of your choice; this could include roasted vegetables like cauliflower, broccoli, carrots etc., quinoa/rice blend seasoned with garlic powder, paprika & oregano, black beans & corn salsa etc.. When potatoes are done baking let cool for 5 minutes before slicing open lengthwise & stuffing each one with desired filling. Top them off with cheese if desired & enjoy!
